杏仁饼

我一年到头都有做饼干,所以做年饼也不是那么逼切。
不久前,看澳门回归十周年纪念的节目,有访问嘴香园杏仁饼的东主。
我们过去新年一定会买一桶嘴香园杏仁饼,是那种圆铁罐的,饼内有夹肥猪肉的。
虽然这里的华人商店可以买到,但是我一直很想学做这传统广式饼干。
其实这种杏仁饼就是绿豆饼,用绿豆粉做成杏仁型的小饼干,后来有人加了磨碎烤香的杏仁,即成了名副其实的杏仁饼。


第一次做这饼干,材料和份量都是估估下。
材料:
绿豆粉 450g,猪油 180g,糖粉 250g,水 40ml,烤香杏仁碎 250g。

做法:把绿豆粉 ,糖粉 ,烤香杏仁碎混合,加入猪油,拌匀,呈松散状,后加入水,能够粘合粉团并抓成块状就可。压入饼模内,敲打出来。180度C烤大概20—25分钟。

传统的圆饼的形状,我没有适合的饼模,用小月饼模压一半的厚度,工作很麻烦很慢。

The 2nd pic looks like chao mai beng. I didn't know that traditional almond cookies uses green bean flour.. This is my mom's fav CNY cookie. She buys those metal tins improted from China, I hate them, but she loves them. It's got some kind of cockcroach smell, just like almond tea.

Thanks for sharing. I'm sure urs is totally different and yummy.
BTW, my jelly candy recipe is up :)

I use guailou almond so they don’t smell like cockroach. Chinese almond is good for rejuvenation, that’s why old ladies like them. Ha-ha. I like almond tea too.
