小时看外婆做年糕,要把糯米磨成米浆,还要压干,然后加糖,搓呀搓得糖溶了,还把米浆提起来看看,不行的话,又继续搓,直到米浆的韧性够了,才装到大罐小罐里。大大的镬烧滚了水,把蒸隔放上,排好一罐罐,用柴火蒸上老半天,直到白色的米浆变成了红褐色,年糕才算蒸好!整个过程好繁杂。十多年前在外国学会了一个做年糕的简易方法,做出来摊冷就可以切来吃,非常方便!这里与大家分享!
材料:
糯米粉 260g
澄面粉 160g
方块蔗糖 500g
水 2 cups
油 1tbsp

做法:
水和方块蔗糖放入锅内煮溶,放置一旁约五分钟,让温度降至手可以下探的温度(约70-80度C)。

混合糯米粉和澄面于一大盆。

加入稍微冷却的糖浆,还有油,搅拌均匀,至没有粒状。

过滤,去掉杂质,也让米浆更滑。

放入8--10吋盆中,大火蒸半小时,转中火蒸两小时。

蒸熟摊冷后,就可切片食用。
也可沾蛋液煎过食用。
